2 days 'til Christmas!

Its the eve of Christmas eve! I am sure you have felt the rush and chaos of the holiday when you take a trip to the mall and especially Walmart. I have to make one more trip today to pick a few ordered Items and a quick grocery errand.

Today I am making:

123 Sausage Balls:

1 pound of your preferred Sausage
2 cups of Cheddar Cheese
3 Cups of Bisquick

Allow cheese to come to room temperature. Combine all ingredients (easier done by hand). Shape into 1 inch balls and place on ungreased cookie sheet. Bake at 350 degrees for 12-15 minutes. Serve immediately or may be frozen for future use.

Makes 40-50 balls.

Chocolate Cake Mix Cookies:

1 pkg. Chocolate Cake Mix

1/2 c. margarine or butter, softened

1 egg

Combine all ingredients at low speed until thoroughly moistened. Drop by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets. Bake at 350 for 9-12 minutes. Cool two minutes; remove from pans.

Tips: If using chocolate cake mix, add 2 Tbsp. water to ingredients

If desired, stir in 1 c. chocolate chips or 1/2 c. chopped nuts.

If desired, frost cookies with your favorite flavor of frosting.

For sandwich cookies, spread frosting between 2 cookies.

I was tagged by a southern girl in the city in Photo Tag!
This picture was taken on my birthday weekend. We had a big 4-wheeling day with guns and a bonfire. In this picture I was shooting cans with a 22 rifle. The girl in the background is my future sister-in-law.

{little things}

First of all I would like to say that the PA program open house went very well. I must admit that I left feeling a tad intimidated, but only because of my age. I was totally encouraged from the fact that I felt like my education experience was just as good and even better than most of the other prospective students. I was in a sea of people like the cute little man who has already been a practicing physician for 30 years in another country and the athletic trainer for APP state and an RN of 10 years. I defiantly felt young. Intimidated but not at all discouraged. So needless to say I need experience. So I am going to set off to do just that.

Tonight I am going to the Behold the Lamb of God Concert at Mecklenberg Community Church. I know that it is going to be a Christmas experience that I will never forget.

Tomorrow I am going to go finish up Christmas shopping! This time of year is always so busy but I LOVE IT!

open house

I am off to my first PA studies open house today at Wingate University. I have so many emotions: nervous, excited, scared... It must just be the fear of the unknown and the fact that my life is about to drastically change.
